The boys over at The Civil Life Brewing Co. have been pretty quiet as of recent. But that’s usually what happens when you’re in the final throes of opening a new brewery. I’m happy to announce that Jake Hafner, Mike Bianco, and Dylan Mosley finally have some news to share.
Here’s a line-up of the beers that we can expect from the Civil Life in the very near future:
British Gold, or as we call it: “Bling!” – Its an English Special Bitter with a nod to Hook Norton Brewery. Mike came up with the final recipe that balances American Centennial bittering hops against floral East Kent Goldings. English malt and yeast, STL water. Bright gold and hoppy!
American Rye Pale – Lots of Rye malt stacked up against Chinook and Centennial. Spicy and Round like Cartman but not as divisive. American Yeast meets English and German base Malts.
German Hefe – German Yeast, North American Spring and Winter Wheats, Hallertau Hops. We fermented on the warmer side of this yeasts spectrum so that classic Bread, Banana, and Clove combo shows through. Tasting this one progress through fermentation has been awesome.
English ESB – Full on Fuggle attack. Heavy floc yeast, Marris Otter, and STL water. Some EKG because nobody wants to live in a world without Goldings. A deeper, spicer beer than the Bling.
American Brown – Yeah Brown! Guess what? Brown Malt. Cascade does it. Cascade will always have spot near my heart – over by my liver. This brown was modestly structured to bring roastiness/chocolatism/and coffeeonics into divine harmony and make S&P upgrade the USA’s credit rating. Time will tell.
It’s interesting to note that all of these beers fall between 4.8-5.7% ABV, something Dylan calls their “sweet spot.” Also, there is a good chance you’ll not see all of these beers on opening night, but they’re definitely styles that will be available soon after opening, along with “237 other types of beer” they’re also looking at.
That brings up the final question of: “When is opening night?” In true Civil Life fashion, that’s something the boys are still keeping close to their vest.
